During a trip a few years back to Vermont, I was driving up a very steep wooded mountain with my girlfriend and sweet but naughty dog when the rental car started to sputter. Just barely, we were able to reach a village – picturesque, a place right out of a fairy tale, in fact….and we came across, beside a freshwater stream shimmering with filtered sunlight, a cottage with steam shooting out of the chimney. This was a sugarhouse – a place where, for the past quarter century, a mom and pop made maple syrup over a traditional wood fire. Before leaving with several gallons of dark, robust maple syrup, we walked along the stream – the kind of energizing morning stroll one could make on lush mountainsides across the American Northeast and Pacific Northwest – and an idea emerged: to create a wholesome granola whose clean, pure ingredients come straight from the region’s most beautiful places.
